Harvest Hamburger Soup


This recipe can be found in the Mormon Cookbook. I am in love with it. It is perfect to eat on those really cold days and fills you up well. There is a bit of sweetness to it but do not be scared-it only enhances the flavor!

Ingredient:
1 lbs. ground beef
1/2 onion, chopped
2(10.5oz) cans beef consomme (I used beef granuals and it works well-don't leave this out though-I found out the hard way that it is an essential part of this meal)
2 cups water
1 1/2 cups chopped fresh tomatoes OR I use one(12oz) can chopped tomatoes
2 TBSP sugar
1 1/2 cups fresh corn OR I use one (11oz) can corn
2 carrot, peeled and diced
4 potatoes, diced (I don't peel mine but you can if you want)
1 tsp. taco seasoning
Salt and Pepper to taste
1 cup grated Mozzarella cheese (optional-I NEver do this)

Directions:
Brown ground beef and onion. In a large saucepan combine all ingredients except cheese. Cook uncovered until vegetables are tender(about 20-25min.) Add cheese to individual servings if using it.Makes 6 servings
