Cafe Rio-need I say more???

Café Rio Recipes

Café Rio Pork
1 McCormick grill mate southwest marinade pack
1 ½ c Water or 1 bottle of Dr. Pepper ( I used water and it was still awesome!)
½ c Vinegar
½-1 ½ c Brown sugar (depends on how sweet you want it) (I used a cup and I liked that)

Mix all ingredients and put in a crock pot with pork. Cook on low for 5-7 hours pork is done in the middle. Shred the pork with a fork then put it back in the marinade and keep the crock pot on low until serving. SO EASY!!!

Café Rio Dressing
1 Buttermilk ranch dressing packet (make as per recipe)
2 Tomatillos (you do not need to boil-just remove husks and put in blender)
½ Bunch Cilantro
1 Garlic clove
Juice of 1 lime
1 Jalapeno (this makes it WAY spicy-I would use 1/4-1/2 of jalapeno-make sure to leave out seeds unless you like your mouth burned off!!!! Even Jeff thought that it was too hot!)
Use a food processor to blend all of the ingredients. Blend well and refrigerate.SO worthit.

Café Rio Chicken
1 Small bottle of Kraft Zesty Italian dressing
1 Tablespoon chili powder
1 Tablespoon cumin
3 Garlic cloves (minced)
5 Lbs. Chicken breast

Cook all together in a crock pot for 4 hours. Shred meat and cook for 1 additional hour.

Café Rio Rice
3 c Water
4 Teaspoons Chicken bouillon
4 Teaspoons Garlic (minced)
½ Bunch cilantro
1 Can Green chilies
¾ Teaspoon Salt
1 Tablespoon Butter
½ Onion
3 c Rice

Blend cilantro, green chilies and onion together in a food processor. Bring water to a boil and add all ingredients. Simmer (covered) for 30 minutes.

Guacamole
3 Large avocadoes
1 Large ripe tomato diced finely
2 Garlic cloves chopped finely or mashed
1 Tablespoon olive oil
3 Tablespoons Lime juice
Salt and pepper to taste

Smash avocadoes. Add the remaining ingredients to the avocadoes and stir. Blend mixture for creamier guacamole. (To be honest this is not my favorite recipe for Guac)
