Barley and Chicken Soup from Jill

At Medium heat add in pot
2 tbsp oil
1 cup onion
1 cup carrots
(I add mushrooms too)
sauté covered 5 min. stir occasionally
add 10 oz ground turkey (break apart)
a little poultry seasoning (any kind)
let cook until not pink (5 min. or so)
2 cups water
4 cups chicken broth (canned or bouillon)...I add a little more
bouillon for more flavor
spinach
salt to taste
pepper to taste
3/4-1 cup barley
bring to boil
reduce to a simmer & cover partially for 40-45 min.
