Homemade Noodles for Chicken Noodle Soup

2 c. Flour
3 Egg Yolks (throw out whites)
1 Egg
2 tsp. salt
1/4-1/2 cup water

Put flour in bowl-make a "well" in the center and add the egg yolk, 1 egg and salt. With your hands thoroughly mix egg into flour
Add water ***1 TBSP at a time
Mix thoroughly after each addition of water
Add only enought water to form dough into a ball
Turn dough onto a cloth or well covered board or counter
Flour suface well and knead until smooth and elastic
Cover and let rest 10 min.
divide in 4 equal parts
Roll dough 1 section at a time into paper thin rectangle-keep the dough covered.
Cut in strips or rollup and cut 1/8-1/4 in. wide
Put in 3 quarts (4cups =1 quart)of boiling water (add 1TBSP salt)
and boil for 12-15min. *** Note: you may just add the uncooked noodles to the soup and have them cook for 12-15min. too.
