Jeff's family makes this and I fell in love! It has some spice to it but very tasty. ***Note: Try not to get old Coconut milk- It doesn't turn out quite as tasty.
2-3 Medium Potatoes
2 Boneless, skinless chicken breasts
2 cans Coconut Milk
1TBSP. Thai Curry Paste (I use Red- You buy this at and oriental store and it will last you FOREVER!)
2 tsp. (rounded) curry powder
1 TBSP. oil
1 TBSP Salt
1TBSP sugar
*Rice
1. Cut up Potatoes; cut uncooked chicken into bite-size chunks; set aside
2.Mix Thai curry paste and curry powder together; set aside
3.In large frying pan or skillet, add 1TBSP oil and heat on Medium. Then add paste/powder mix and 1/2 can coconut milk. Dissolve the paste. Bring to simmer.
4. Add remaining coconut milk; simmer, add salt and sugar. Stir
5. Add potatoes and chicken. Cook until done (slow simmer) about 15-20min.
*Serve over Rice
**I sometimes add a green or red pepper for color
