2 chicken breasts
1 cup ketchup
½ cup finely chopped onion
4 tbsp. sugar (2 brown, 2 white)
3 cups water
2-3 tsp worchestire sauce
½ tsp. garlic salt
1 tsp. crushed red pepper
¼ cup barbecue sauce
Put all ingredients into the crock pot, except brown sugar and cook on low 6-8 hours. Just before assembly add brown sugar.
Filling:
1-2 cups of white rice
Cojack cheese
Pinto beans
Black beans
Can of green enchilada sauce
Tortillas
Fill tortillas with chicken and above ingredients. Roll enchilada style and place in 9x9 or 9x13 pan. Pour green enchilada sauce over top and sprinkle cheese. Heat @ 350 degrees until cheese melts.
