Missionary Meatloaf

Missionary Meatloaf
It might look questionable when you are done and you might think that you don't want to put it in your mouth but believe me-you do!It is so tasty surprising. A great twist on the normal meatloaf. Enjoy!

Meatloaf:
2 lbs. ground beef
2 Eggs, beaten
1 cup bread crumbs (or crushed soda crackers)
½ cup chopped onion
½ cup grated carrot
½ cup ketchep
¼ barbeque sauce
½ cup milk
1 tsp salt
1 tsp pepper
1 tsp dried thyme
1 tsp dried sage
½ lb.bacon strips, uncooked (optional-I never add this b/c I don’t have bacon…or need it)

Sauce:
2 cups ketchup
2 cups brown sugar
(Place ketchup and brown sugar in a bowl. Heat in microwave. Stir until blended.)

In a large bowl combine all ingredients except bacon and Meatloaf sauce. Mix well. Place in greased 9x6-inch loaf pan. Cut bacon strips in half and place over top of meatloaf to cover(optional). Bake at 350* for about an hour. Remove from oven and drain off excess juices. Spoon on enough Meatloaf Sauce to cover top. Reserve additional sauce for passing. Return to oven and bake for about 20 minutes or until meatloaf is done (meat thermometer should read 350*). Let stand for a few minutes before cutting. Makes 8 servings.
