Pumpkin Cake

I love all things pumpkin and this certainly tops the list!

Pumpkin Cake from Tina Evans

Cake:
2 cups sugar
2 cups flour
16 oz. can pumpkin
1 cup oil
1/2 tsp. salt
4 eggs
2 tsp baking powder
1 tsp cinnamon
1 tsp. baking soda

Icing:
8 oz. cream cheese
6 tbsp margarine
4 cups powdered sugar
1 tsp. vanilla

Cake: Mix together sugar, oil, eggs and pumpkin. Add all other dry ingredients. Pour into an ungreased cookie sheet (15 1/2 x 10 1/2 jelly roll pan - also works well in 9x13) and bake at 350 degrees for 25-35 minutes, or until cake springs back when pressed lightly. Once cake is cooled, frost the top with cream cheese icing.

Icing: Cream butter and cream cheese. Add vanilla and then powdered sugar. Frost cooled cake.
